- 6 large eggs
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon white vinegar
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup finely chopped green onions
- 1/4 cup crumbled bacon
- 1/4 cup shredded cheddar cheese
- Paprika for garnish
Instructions
- Hard boil the eggs by placing them in a pot, covering with water, and bringing to a boil. Once boiling, cover and remove from heat, letting them sit for 12 minutes.
- Cool the eggs in ice water for 5 minutes, then peel and slice them in half lengthwise.
- Remove the yolks and place them in a mixing bowl. Mash the yolks with a fork.
- Add mayonnaise, Dijon mustard, white vinegar, salt, and black pepper to the yolks and mix until smooth.
- Fold in the chopped green onions, crumbled bacon, and shredded cheddar cheese.
- Fill the egg whites with the yolk mixture using a spoon or piping bag.
- Sprinkle with paprika for garnish before serving.
Notes
- For a spicier version, add a dash of hot sauce to the yolk mixture.
- These can be made a day in advance and stored in the refrigerator.
- Feel free to customize with your favorite toppings like pickles or jalapeños.
