Ingredients

  • 4 apples, peeled and cored
  • 1 cup sugar
  • ½ cup vegetable oil
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon ground cinnamon
  • ½ teaspoon ground nutmeg

Instructions

  1. Preheat the oven to 350°F (175°C). Grease 1 large loaf pan or 4–5 mini loaf pans.
  2. Shred the apples using a grater.
  3. Place the shredded apples and sugar in a large mixing bowl and let sit for 5 minutes.
  4. Add the vegetable oil, eggs, and vanilla extract to the apple mixture. Stir to combine.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  6. Gradually stir the dry ingredients into the wet ingredients until just combined.
  7. Pour the batter evenly into the prepared pan(s).
  8. Bake for 30 minutes for mini loaves or about 55 minutes for a large loaf, or until a toothpick inserted in the center comes out clean.
  9. Remove from the oven and let cool slightly before slicing and serving.
