Description

A simple casserole dish combining chicken and rice with creamy soups.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 cups Minute Rice (brown or white)
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can water (use one of the empty soup cans)
  • 1 tablespoon butter
  • 1 envelope onion soup mix

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Butter a 9 × 13-inch baking dish using the tablespoon of butter.
  3. In a medium bowl, mix together the cream of chicken soup, cream of mushroom soup, water, and Minute Rice until well combined.
  4. Pour the rice mixture evenly into the prepared baking dish.
  5. Place the chicken breasts on top of the rice mixture.
  6. Sprinkle the onion soup mix evenly over the chicken.
  7. Cover the dish tightly with foil and bake for 1 to 1½ hours, or until the chicken is fully cooked and the rice is tender.
  8. Remove from the oven, uncover, and let rest for a few minutes before serving. Enjoy!
