Chicken Buttered Noodles: 5 Steps to Comforting Bliss

Description

A comforting dish of chicken served over buttery noodles with garlic and herbs.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 oz (225g) egg noodles (or any pasta)
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme (or 2 teaspoons fresh thyme)
  • 1 teaspoon dried parsley (plus more for garnish if using fresh)
  • 1 cup low-sodium chicken broth
  • ½ cup heavy cream
  • Salt and black pepper, to taste
  • Optional: grated Parmesan, for topping
  • Optional: red pepper flakes, to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken on both sides with salt, pepper, and thyme.
  3. Sear chicken for 5–6 minutes per side until golden and cooked through (165°F / 75°C).
  4. Remove chicken and let rest for 5 minutes, then slice into strips or bite-size pieces.
  5. Bring a large pot of salted water to a boil and cook noodles until al dente.
  6. Drain noodles, reserving ½ cup of pasta water.
  7. In the same skillet, reduce heat to medium and melt butter, scraping up browned bits from the pan.
  8. Add garlic and sauté for 1 minute without letting it brown.
  9. Add chicken broth and simmer for 3–4 minutes to reduce slightly.
  10. Stir in heavy cream and simmer for another 3–4 minutes until lightly thickened.
  11. Add noodles to the skillet and toss to coat, loosening with reserved pasta water if needed.
  12. Add sliced chicken back in and toss everything together.
  13. Taste and adjust salt and pepper. Sprinkle with parsley and optional red pepper flakes.
  14. Serve hot with grated Parmesan if desired.

Notes

  • Adjust seasoning according to your taste.
  • Use fresh herbs for better flavor if available.
  • Store leftovers in an airtight container in the fridge.
