Description
A comforting dish of chicken served over buttery noodles with garlic and herbs.
Ingredients

- 2 boneless, skinless chicken breasts
- 8 oz (225g) egg noodles (or any pasta)
- 4 tablespoons unsalted butter
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried thyme (or 2 teaspoons fresh thyme)
- 1 teaspoon dried parsley (plus more for garnish if using fresh)
- 1 cup low-sodium chicken broth
- ½ cup heavy cream
- Salt and black pepper, to taste
- Optional: grated Parmesan, for topping
- Optional: red pepper flakes, to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken on both sides with salt, pepper, and thyme.
- Sear chicken for 5–6 minutes per side until golden and cooked through (165°F / 75°C).
- Remove chicken and let rest for 5 minutes, then slice into strips or bite-size pieces.
- Bring a large pot of salted water to a boil and cook noodles until al dente.
- Drain noodles, reserving ½ cup of pasta water.
- In the same skillet, reduce heat to medium and melt butter, scraping up browned bits from the pan.
- Add garlic and sauté for 1 minute without letting it brown.
- Add chicken broth and simmer for 3–4 minutes to reduce slightly.
- Stir in heavy cream and simmer for another 3–4 minutes until lightly thickened.
- Add noodles to the skillet and toss to coat, loosening with reserved pasta water if needed.
- Add sliced chicken back in and toss everything together.
- Taste and adjust salt and pepper. Sprinkle with parsley and optional red pepper flakes.
- Serve hot with grated Parmesan if desired.

- Adjust seasoning according to your taste.
- Use fresh herbs for better flavor if available.
