Ingredients

  • ½ lb ground beef (certified)
  • Salt and pepper, to taste
  • Pinch of red pepper flakes (optional)
  • ¾ cup chicken broth
  • ½ cup Pepper Jack cheese, shredded
  • 16 oz Velveeta cheese, cubed
  • 1 (14.5 oz) can Rotel tomatoes, partially drained
  • 1 cup black beans, drained and rinsed
  • ¼ cup red onion, finely diced
  • ¼ cup fresh cilantro, chopped

Instructions

  1. In a large skillet over medium-high heat, cook and crumble the ground beef. Drain any excess grease.
  2. Stir in red pepper flakes (if using), salt, and pepper. Pour in the chicken broth and let it simmer for 4–5 minutes.
  3. Reduce heat to medium-low. Add Velveeta cubes and Pepper Jack cheese, stirring occasionally until melted.
  4. Stir in black beans, red onion, and cilantro.
  5. Gently fold in the Rotel tomatoes. Add some juice if you prefer a thinner consistency.
  6. Continue cooking for 5 minutes until everything is heated evenly. Serve warm with tortilla chips or pita bread.

Notes

  • You can use shredded cheddar or mozzarella instead of Pepper Jack if desired.
  • For extra flavor, add a pinch of smoked paprika or cumin.
