Cheese Dip with Ground Beef is a creamy and flavorful dip perfect for parties. It combines ground beef, cheese, beans, and spices.

- ½ lb ground beef (certified)
- Salt and pepper, to taste
- Pinch of red pepper flakes (optional)
- ¾ cup chicken broth
- ½ cup Pepper Jack cheese, shredded
- 16 oz Velveeta cheese, cubed
- 1 (14.5 oz) can Rotel tomatoes, partially drained
- 1 cup black beans, drained and rinsed
- ¼ cup red onion, finely diced
- ¼ cup fresh cilantro, chopped
Instructions
- In a large skillet over medium-high heat, cook and crumble the ground beef. Drain any excess grease.
- Stir in red pepper flakes (if using), salt, and pepper. Pour in the chicken broth and let it simmer for 4–5 minutes.
- Reduce heat to medium-low. Add Velveeta cubes and Pepper Jack cheese, stirring occasionally until melted.
- Stir in black beans, red onion, and cilantro.
- Gently fold in the Rotel tomatoes. Add some juice if you prefer a thinner consistency.
- Continue cooking for 5 minutes until everything is heated evenly. Serve warm with tortilla chips or pita bread.
Notes
- You can use shredded cheddar or mozzarella instead of Pepper Jack if desired.
- For extra flavor, add a pinch of smoked paprika or cumin.
- Keeps well in the fridge for 2–3 days.
