Description

Cajun Chicken Alfredo is a creamy pasta dish featuring blackened chicken, fettuccine, and a rich Cajun Alfredo sauce.


Ingredients

  • 1.5 lb boneless chicken breasts
  • 1 tablespoon Cajun seasoning
  • 1½ teaspoons kosher salt
  • 2 tablespoons unsalted butter
  • 16 oz fettuccine
  • 2 tablespoons unsalted butter
  • 8 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy whipping cream
  • 12 oz Parmesan cheese, freshly grated
  • ½ to 1 tablespoon Cajun seasoning
  • ¼ to ½ teaspoon kosher salt
  • 1 cup reserved pasta water
  • Handful fresh parsley, minced (optional)

Instructions

  1. Bring a large pot of salted water to a boil for the pasta. Preheat a large skillet over medium-high heat.
  2. Season chicken breasts on all sides with Cajun seasoning and kosher salt. Add 2 tablespoons butter to the hot skillet. Sear chicken 5–6 minutes per side, until internal temp reaches 165°F. Remove chicken and rest 5–10 minutes, then slice.
  3. Cook fettuccine 1–2 minutes under package directions. Before draining, reserve 1 cup pasta water. Drain pasta.
  4. Reduce skillet heat to medium. Add 2 tablespoons butter plus a small splash of chicken broth. Add minced garlic and cook 1 minute, stirring often. Deglaze with the remaining chicken broth. Reduce heat to low and stir in the heavy cream. Add Parmesan a handful at a time, stirring until melted before adding more, until smooth. Season with Cajun seasoning and salt to taste.
  5. Add pasta to the sauce with a splash of reserved pasta water. Toss until the sauce clings to the noodles. Add parsley if using. Top with sliced chicken, extra parsley, and more Parmesan. Serve hot.

Notes

  • Season gradually with salt and Cajun seasoning.
  • Use pasta water to thin the sauce.
  • Use freshly grated Parmesan for best texture.
  • Rest the chicken to keep it juicy.
  • Store in an airtight container up to 4 days. Do not freeze.
  • Reheat gently with a splash of pasta water.
