Description

Homemade blueberry soft baked bars, perfect for a snack or breakfast.


Ingredients

Scale
  • 110 g oat flour
  • 50 g ground almonds
  • 1/4 tsp baking powder
  • 1/2 tsp cinnamon
  • Pinch of salt
  • 2 tbsp honey
  • 2 tbsp coconut oil, melted
  • 1 tbsp milled flaxseed or ground chia seeds
  • 3 tbsp water
  • 200 g frozen blueberries
  • 2.5 tbsp chia seeds
  • 1 tbsp lemon juice

Instructions

  1. To make the chia jam filling, add the blueberries to a saucepan with honey and lemon juice.
  2. Cook over low/medium heat and mash the blueberries.
  3. Remove from heat and fold in the chia seeds. Cool completely.
  4. To make the dough, mix flaxseed and water in a bowl. Let sit for 10-15 minutes.
  5. In a large bowl, combine oat flour, ground almonds, cinnamon, baking powder, and salt. Add honey, coconut oil, and flaxseed mixture. Mix well.
  6. Divide the dough in half and roll out on parchment paper to 1/4 inch thickness.
  7. Spread blueberry jam in the center, fold over the dough, and press gently.
  8. Roll the log with the seam on the bottom and slice into 6 bars.
  9. Bake in an air-fryer at 180C for 10-12 minutes or in a preheated oven at 180C/160C fan/350F for 20-25 minutes until golden brown.
  10. Let cool and enjoy!

  • Store in an airtight container in the fridge for up to 4 days.
  • Can be eaten cold or reheated.
