Description
Homemade blueberry soft baked bars, perfect for a snack or breakfast.
Ingredients
Scale
- 110 g oat flour
- 50 g ground almonds
- 1/4 tsp baking powder
- 1/2 tsp cinnamon
- Pinch of salt
- 2 tbsp honey
- 2 tbsp coconut oil, melted
- 1 tbsp milled flaxseed or ground chia seeds
- 3 tbsp water
- 200 g frozen blueberries
- 2.5 tbsp chia seeds
- 1 tbsp lemon juice
Instructions
- To make the chia jam filling, add the blueberries to a saucepan with honey and lemon juice.
- Cook over low/medium heat and mash the blueberries.
- Remove from heat and fold in the chia seeds. Cool completely.
- To make the dough, mix flaxseed and water in a bowl. Let sit for 10-15 minutes.
- In a large bowl, combine oat flour, ground almonds, cinnamon, baking powder, and salt. Add honey, coconut oil, and flaxseed mixture. Mix well.
- Divide the dough in half and roll out on parchment paper to 1/4 inch thickness.
- Spread blueberry jam in the center, fold over the dough, and press gently.
- Roll the log with the seam on the bottom and slice into 6 bars.
- Bake in an air-fryer at 180C for 10-12 minutes or in a preheated oven at 180C/160C fan/350F for 20-25 minutes until golden brown.
- Let cool and enjoy!
Notes
- Store in an airtight container in the fridge for up to 4 days.
- Can be eaten cold or reheated.
